In the European Middle Ages, women would often give knights and warriors gifts that included Thyme leaves, as it was believed to bring courage to the bearer. Today, the leaves are used as an herb in many culinary dishes, giving roasted meats, vegetables and even apples a delicious flavour. In medicinal use, Oil of Thyme, the essential oil of common Thyme, has many common antiseptic uses.
During early to mid summer, small flowers grow in clusters around the tips of the branches, enchanting the herb with the lovely scent of a new beginning.
